No-Flour Banana Bread

ripe banana

medium eggs

nut butter
-
dessicated coconut plus extra to decorate

baking powder

vanilla extract
-
ground ginger
-
ground cinnamon
Directions
1.
Preheat oven to 180C/350F/Gas 4 Line a small 13cm/5" baking tin with parchment paper Beat together the eggs and banana in food mixer Add all other ingredients and mix untill well combined.
2.
Spoon the batter into the prepared baking tin.
3.
Bake for 30 minutes or until golden and firm on top.
4.
Allow to cool for 10 minutes before removing from tin and fully cooling on a wire rack.
5.
Scatter with coconut.
