Cauliflower Soup 2
Ingredients

knob of butter

crushed clove of garlic

ground nutmeg

black pepper
-
salt

head cauliflower, chopped
-
large diced carrot
-
chopped spring onions
Directions
1.
In a large pot over medium heat, melt butter.

Cook garlic in butter 30 seconds, then stir in nutmeg, pepper and salt and cook 30 seconds more.
3.
Pour in the water and introduce the cauliflower.
4.
Bring to the boil, reduce heat, cover and simmer 20 minutes until cauliflower is tender.
5.
In a small saucepan over medium heat, cook carrot with water to cover until just tender.
6.
Drain and reserve.
7.
Purée cauliflower soup in a blender or food processor or with an immersion blender.
8.
Stir in reserved carrots, spring onion and parsley.
9.
Serve.
